Chocolate Strawberry Cheesecake

Crust

  • 8 Medjool Dates, pits removed
  • 1 tsp Coconut Oil
  • 2 cups Walnuts
  • 1 cup Unsweetened Shredded Coconut
  • ½ tsp Salt

Filling

  • 1 Wheel SriMu Elder
  • ¼ cup Peanut Butter
  • 2 tbsp Coconut Oil
  • ½ cup Agave
  • ½ tbsp Vanilla Extract
  • 3 tbsp Cacao or Cocoa Powder
  • ¾ cup Almond or Oat Milk
  • 1 cup Strawberries, finely chopped

 

  1. Lightly oil the bottom and sides of a deep 6-inch or 9-inch springform pan with oil.
  2. In a food processor, place the walnuts and pulse until they reach a mealy texture. Add the shredded coconut, salt, and dates. Blend on high until a dough forms. Scrape down the sides of the food processor as needed.
  3. With damp hands, transfer the crust mixture to the springform pan and press down so it covers the bottom evenly.
  4. Add all filling ingredients except strawberries to a high powered blender and blend until smooth. Fold in strawberries.
  5. Top with shaved chocolate or cacao nibs.
